In accordance with the faculty curriculum, the 2nd year students must collaborate on a project where teamwork is essential in order to acquire managerial competencies and combine practice with theory.  This year, the first group chose the theme, “Titanic.”

 

On April 15, the students created, planned and executed their banquet event, 104 years to the day of when the luxury liner sank in the Atlantic.  The SFHM hosted over 180 guests for a special evening of entertainment and culinary delights.

 

The entire La Gastronomique ballroom was transformed into a nautical theme with portholes, flower adorned candelabras, paintings, luggage, and costumed staff, keeping in line with the style of the times.

 

Guests were treated to a speech by the captain, live orchestra music, professional dancers, singer, scenes from the iceberg sighting, and what followed.  Students recreated the last dinner aboard the ship which consisted of duck mousse with glazed figs and pomegranate, goat cheese with asparagus tips, roasted salmon pavé, grilled beef medallions, and a basil scented vanilla parfait with caramelized peaches.
