In November 2016, The Sagesse Faculty of Hospitality Management hosted an evening of Italian culinary delights in collaboration with Instituto Italiano di Cultura.  Internationally recognized Chef Renato Bolsieri of Casa Artusi traveled directly from Italy to the faculty for the special evening of gastronomic delights.

 

The menu consisted of classic Italian food.  Some of the highlights included crescioni (spinach fritters), tortini di ricotta (ricotta croquettes), tagliatelle all’uso de Romagna (Romagna-style tagliatelle), risotto coi gamberi (risotto with prawns), polpette (Italian-style meatballs), tortino di petonciani (eggplant casserole), and cacciucco (fish stew).

 

For dessert, zuppa inglese (English trifle) and torta di mandorle e cioccolate (chocolate almond cake) were served.
